這是一道源自於古羅馬、古希臘的窮人料理，因為洋蔥取得容易，會用肉湯做基底再加入洋蔥燉煮。
我認為美味的來源，在於如何打洋蔥慢炒至焦化，還有酒下的時機也很重要，留個各方香氣。

食材
- 洋蔥切薄片– 2公斤(約7顆左右)
- 奶油–57g
- 白蘭地或雪莉酒–120cc
- 雞高湯或牛高湯–4公升
- 香料束(百里香、迷迭香、鼠尾草)或是義大利綜合–各式香料抓一小把綁一起，義大利香料則是1T。
- 鹽、黑胡椒–視情況調味
做法
- 準備一個燉鍋，把奶油和洋蔥放入，以中小火慢炒使洋蔥交糖化，要不斷翻炒才行，直到褐色為止，總共約30分鐘。切記不要加鹽，避免洋蔥出汁，才能達到完美的焦糖化。
- 再來倒入酒，把鍋底殘渣溶解刮起，用大火把液體和酒精收乾揮發。
- 放入高湯和香料，開中小火，讓洋蔥軟爛還有風味更強化，煮了大概30分鐘後，就準備上桌享用了，最後再用鹽巴和胡椒適當的調味，完成。
PS.如果是用雪莉酒就會是在湯快好的5分前加入，讓酒精揮發一些，因為雪莉酒屬於甜酒類，在收尾時加入效果為佳。
變化版本:
白洋蔥湯：洋蔥用奶油小火煮軟，尚未上色前，加入約150克麵粉做為勾芡的效果。再把洋蔥打成泥倒回湯內。

總結和想法
個人認為這一次的食譜很棒，材料不難，做法也快速，方便大家在家裡面做一道法式料理，而且絕對不難喝，事實上在外面想喝到洋蔥湯還算是蠻難的，不然就是價錢偏高，但是事實上他材料不貴，只是貴在工阿。
在操作上大家按照食譜和影片的教學就一定可以完成，這道湯品在平常晚餐或是特別聚餐端出來都是會讓人食指大動的，像我自己很愛在員工餐端出來，因為很簡單而且真的太好喝了~~
